The compressor is engaged and disengaged by a magnetic clutch. So replacing the compressor itself probably help. Check the magnetic clutch and the circuit.

so some short update. We've ruled out the viscous fan by fitting it to a different defender, and it's working absolutely fine.
The search goes on I guess... :-/
