If was me, go standard LR and update all the dash to a post 2002 Defender Td5 spec... Everything fits properly, looks OE etc etc. I've done a couple of mud dashes (will post pictures later) with carling switches (and double DIN stereo) look nice, but I still prefer OE. Or late Td5 - but with a Mud Panel to mount some different switches. Then a bit of flocking - and jobs a good'un. I am in the same place at the moment with updating a dashboard.
I too hate raptor dash's, they look fine for challenge trucks but for every day there a bit too racy for me. I went for an Iron Goat dash as I couldn't find a complete Td5 dash for sensible money (or legitimate source more importantly) I havn't fitted it yet but the plan is to have Radio below, Cb between the gauges, rev counter on right second battery on left and then switches along the bottom row.
