My garage looks a similar size 6x6 externally. Mine was only single storey but I wanted to add a first floor with external stair access. I stripped extg roof off and left wall plate in place. I raised the walls 1.5m to eaves using a lightweight steel construction as the floor joists were only 180mm deep to span 5.5m. Have a look at u-roof.com. The external walls are stone. The steel comes in bespoke kit form and is bolted together. If it is of interest let me know - the MD is a mate.

It's not an AOSB in fact it sits within a 10KM zone for fracking. Nearest restricted zone is about 3 mile N. Run some purlins gable to gable into the walls. Tie it all together and then remove the horizontal truss baserails will give a lot more headroom.
