Scotland 2012 Defender 110 Puma 2.2 SW Orkney Grey
I take my seats in and out all the time. Swapping from Camping/Load carrying mode to Scout minibus mode.

Including the dog guard it takes me about an hour using manual tools and putting the bolts back in/out to fill the holes. Gaffer tape works fine over the four holes for the nuts underneath.

I leave the seatbelts in - they fold under the edge of my wooden floor and there are also clips on the window surrounds to stop them knocking.

I never mentioned it to my insurance company. It has passed MOT with and without the seats in.

If you haven't ever taken you seats out, you really should consider it to lubricate all the bolt holes - even mine that is regularly greased sometimes shows sign of corrosion due to the different metals.
