Unless it's a really bad case I wouldn't worry about oil inside the ecu, especially if the defender seems to be running fine. As you said replace the injector loom and clean the red plug out regularly with electrical contact cleaner and you'll probably find it more power returning when it's all clean.
Edit: only go for an oem or genuine injector loom and I sealed mine and haven't had oil in the red plug since. I put a thread up with some pics on here somewhere if you fancy hunting it out. Ray My build thread http://www.defender2.net/forum/topic17615.html |

Oil is not a real problem. Real problem are tiny pins in injector connectors, high temperature of these and high current used for controlling of the injectors (approx.. 80A)
Just clean the connector with a break cleaner without acetone and let it dry. You can also replace o-ring on the injector loom connector on the input od loom into the engine head. Sealing the top lid of ECU is nice idea - use some neutral sealant. And look on those 4mm holes in the bottom lid of ECU.
