We chopped the steel pipes off the original oil cooler lines and connected braided hoses with AN fittings using hardline fittings on the V8 which uses the same type of fittings. You are correct in that they are an unusual fitting design that would be tricky to replace with an aftermarket version.
I would not worry about causing an obstruction by adding a cooler though. Any cooler will be fine, for use in the UK a smaller one would be better on a TDI or the oil will end up being overcooled for most of the year. A small 9 or 12 row one would be fine. The threads in the filter housing are 1/2 BSP. I use a 1/2BSP to -10AN adapter with a dowty washer on to get rid of the land rover fittings, much easier to fit an aftermarket oil cooler just using AN fittings. 1989 90 4.3 V8
